I am wanting proof that Robert LEE born 1817 Ellesmere, Shropshire [(married Sarah Ann FOULKES in 1848) at marriage father noted as William LEE - sadler], mother is Margaret (Margaretta) Jackson - how would I confirm this?

I am not sure whether you are trying to confirm the name of Robert's father or mother - perhaps you could clarify exactly what you are having problems with.
Robert was born before the start of Civil Registration so you need to reply on the church Baptism Register for the earliest entry about him. This should give the father's full name, occupation and abode and the mother's forename(s) but it will not tell you the mothers maiden surname.
Robert was married after the start of Civil Registration so the information which should be contained on the Marriage Certificate can be seen here.
You can order a copy of the Marriage Certificate from the government web site which will also give you links to additional information.
